There are a few ways to do it with only 1 move:

XI + I = X -> IX + I = X
XI + I = X -> X + I = XI

However, the equation can be fixed without moving any sticks! If you simply walk around the other side of the table and look at the equation backwards you can see the reverse equation is already valid:

XI + I = X -> X = I + IX
